Totally interested in this question, as I'm headed to the UNI Job Fair. I mean, resumes, of course, but what else? Do people bring portfolios along? If so, what do you include in them?

I don't think you can over prepare. We always carried packets (got last two jobs without a fair) with resumes, letters of rec and business cards with our pictures on it. Yes, the recruiters have access to all of that at the fair but the truth is, unless they asked to see you, they may prefer to have a resume ready to see. I wouldn't worry about license or college transcripts - all that is asked for after you get the job.
Portfolios - I poured hours into putting one together and most recruiters only glanced at it. Now if you have an electronic portfolio - that will really peak interest and recruiters can look at it at their leisure. It should be referenced on your CV.
CV (curriculum vitae) vs resume - I'm sure there is some technical difference in the definitions but CV just sounds like it's more than just a list of your previous jobs. To me, it just sounds more professional.
To Bring

As far as documents go their are only two types you need to bring: 1) Those you need 2) Those that will impress.
For most people you can skip the transcripts, certificates, reference letters, etc. Id keep them on your laptop, so if you need to you can email them to ay recruiter that wants or asks for them.
Unless your portfolio is going to really dazzle someone or indicates that you have tech experience, its unlikely anyone will look at it. Usually only digital portfolios are looked at if they include a teaching demo.
A CV is your entire professional history. Everything and the kitchen sink. A resume is just the relevant professional information (education, experience, skills, credentials). A CV includes publications, conferences, professional memberships, etc.
