I had a position in Italy for two years. I had a tax break for those two years. I know I will have to pay taxes if I ever decide to work in Italy again.

If I get a job in Germany, Poland, or another EU country, will I have to pay taxes there, or would I get a tax break in that country?

If you move to Germany you will have to pay pretty heavy German taxes. You can apply for a refund if you leave after your initial two year contract.
