Each school has a different policy, but I would look into having the director, curriculum coordinator, counselor also write for you. If they understand the situation they can elude to it in their letters. "the principal is upset to lose such great teachers, but we understand that they want to expereince another part of the world. I know they will be wonderful additions to any school....".

Get copies of letters on letterhead and personal email addresses for the future because some people become very hard to locate later on!

Good tips from Puka. I have NO relationship with my principal, who is very remote and quick to alarm, so I've always kept my head down in her presence. I rarely even see her, much less been observed by her, so I asked our school director, curric coordinator, and the VPs for MYP and IB to write letters, which they gladly did. They are my references on Search and TIE as well.

Well, thanks, Ichiro, I guess...but it was the OP whose principal was giving him/her hell about leaving. I hardly ever see my principal, much less discuss things with her, which is fine with me. I'm sure she's aware via the grapevine that I'm leaving, but hasn't--and probably won't--weigh in on it.
