Your a unique case. I think you have very good possibilities. Im going to recommend Hong Kong as the focus of your job search with places like Japan, Singapore, Thailand and major cities in China (Bejing, Shanghai, GZ), but focus on HK. HK has a ton of schools and with your unique combination of curriculum experience (Australian and Canadian) you will fill a very in demand niche market. Your one of the few couples that i recommend should apply separately. The idea is that you end up at two different schools so that you can take full advantage of housing allowances (most schools give a couple 1 1/2 or less of the single housing allowance, as thats where the major saving are). By applying to separate schools you get double everything, which will help you reach that savings potential you want.
That goal of $40K even with 2 salaries will be hard to reach especially with a newborn. HK also has very good and western medical facilities and is away from the industrial manufacturing parts of mainland China.
