Teacher Aid experience doesnt count, you have essentially no credible experience, and your right your age doesnt help. If your current IS hasnt pulled out a full time appointment for you in 10+ years whats wrong? Is the current Spanish IT just still there so there is no vacancy? If your at a tier 1/Elite tier IS and you have a solid reference from that HOS that should get you at least some interviews, somethings wrong, you need to find out what.

American curriculum ISs tend to be at the bottom and very top of the tiers. At the top you have embassy ISs and at the bottom you have local ISs that say they are American curriculum ISs because its not a regulated term. Any IS can hire American ITs and then download CC guidelines and say they are an American IS/DS.
Have you been restricting your job search to just upper tier ISs?
You could probably find something in CSA or the ME at a lower tier IS that would hire you as a full appointment but it would be at a low tier IS.

SA (Search Associates) does run an intern program, its during their BOS job fair, but it has already passed this year. However you could register as an intern and still get full access to the jobs database.

ISs with internship programs are either upper tier ISs with real intern programs where you get a full salary (though at the lowest step on the salary scale) and some/most OSH benefits, however these vacancies are usually limited to one maybe 2 at most whole IS vacancies, its unlikely a FL would be that vacancy.
The other type of internship programs are low tier ISs that are just looking for cheap labor, you do the full job of an IT for a LH package, and sometimes you dont even get the appropriate visa.

Yes, in general even bottom tier ISs fulfill the standard 2 year bar to entry into IE. You may very well have to look for just any vacancy in Spanish you can find even in hardship regions, etc..

"Hiring Freeze" is just leadership/admin speak for there current IT is on a 2 year contract and there just isnt a vacancy. if that IT leaves for some reason the hiring freeze will be suspended, so that they can hire a new IT. Its a softer version of the typical rejection.

Internships as described above are programs for NQTs that are fully credentialed but lack the requisite 2 years experience. Often an upper tier IS will have one maybe two whole IS interns. They are paid positions usually at the bottom of the salary scale, and you may get all, some, or none of the OSH benefits.

Have you considered getting your 2 years of experience teaching Spanish at a public school in the U.S.? Even though they may not be in demand in ISs, language teachers are very much in demand in public schools in the U.S.

You may wish to consider adding a credential in primary/elementary education, or other similar subject area that has a greater quantity of vacancies. Since you are a LH, you may find it much easier to find employment if you switched focus away from FL (Spanish). You will always be able to market yourself as a FL IT, but you need to create opportunities for yourself and build your resume. Best practices in the classroom are best practices regardless of the subject of instruction. In addition adding primary would make you a suitable candidate for FL immersion positions which are typically seen with young learner classrooms.
