It's not like I'm turning down schools left right and center or anything, but I'm curious:
If you just have a feeling a school isn't right, what do you say to reject them?
It's not you, it's me

Be honest. Just tell them you don't feel that it is a good fit between the school and you, and that it would be a disservice to them for you to take the job feeling that way.

I don't think you even have to say it isn't a good fit. In fact, I wouldn't. If you're offered a contract and you don't want it (because you don't feel like it's right for you), just say something short and sweet like, "Thank you so much for your kind offer. I greatly appreciate the time and consideration you've given me, and it's been great to get to know more about xyz school. At this time, however, I've decided to proceed with a different contract from another school. Thank you again and best wishes as you continuing recruiting this year."

Thanks!
Also, of you replace "school" with "man/woman", these all sound like ways people get dumped. Heh.
