The value of IB experience going back home
I'm curious if IB experience is seen as a significant advantage versus other Canadian curricula if I were to return to Canada to teach later.

Depends on your province. Most likely, you would have a shot at international schools here (private schools and international I should say)
In BC - more public schools are going PYP and MYP - so experience/training helps. My school looks externally for those with experience. However, as I am sure you are aware, there are a lot of local teachers looking for work and they seem to get the posts.
I know someone who came back and got on with a private school quite easily...but she had contact there years ago.
So, I think it can't hurt. There is a great blog post in the archives about returning home - worth a read.
