Vietnam does have an age limit of 60 for women and 65 for men for the FIRST work permit. If you have a work permit before those ages you can continue to have the work permit renewed beyond those thresholds. Schools are primarily responsible for enforcing this policy during the hiring process. Some schools are more vigilant than others. I don't think it's impossible that someone over the age limit could manage to get a work permit, but it most likely wouldn't be completely above board. The hazard for a new hire is that you would only know if the work permit would be approved after you arrived in country with all the paperwork. Quite a chance to take in my opinion.

The references you mentioned sound sufficient as "open" references (I'm thinking you mean letters of reference). More important are the confidential references that the recruiting agencies provide to schools. On your resume, I would recommend listing contact information for your referees. That saves recruiters from having to email you for that information. I always make a point of contacting two referees by phone or personally at a fair. If there are any concerns, I'll look for a third or fourth contact. But, that is rare.

I got my first break into a first tier school because I worked with someone who had been at that school previously, knew the school and knew my work. He paved the way.
Now, as a recruiter, I take very seriously information I receive from teachers. When I have a teacher tell me they know someone who would be a benefit to our school, I look very seriously at them. Personal connections go a long way.
